Homemade Whole Wheat Hotcakes with Lemon, Blueberry-Maple Syrup (Sugar free)
I absolutely love blueberry pancakes. There’s something about them that is so nostalgic. When I was a little girl my mother used to take me to IHOP. It was such a fun experience. We’d sit at the tables and look at all the different hot syrups. Blueberry, raspberry, blackberry, cinnamon, and maple were just a few of the myriad of delicious syrups. I believe at that time there was over 30 different flavors. Each flavor was more exciting than the next. They made a normal stack of pancakes seem spectacular.
So for today’s post, I’ve decided to recreate my favorite IHOP plate, and that of course would be blueberry pancakes. Of course because of my dietary restrictions, I’ll be making hot stacks of whole wheat, fluffy pancakes, served with my homemade sugar free Lemon, Blueberry-maple syrup. These came out great, and it was really hard to eat just two pancakes. The family loved them, and my husband, of whom doesn’t like blueberries, loved these! Total win, will definitely make these again and again.
