Maybe it’s the nearing end of the school year, or just the beginning of spring, but I’m just totally lovin’ lemons right now. So this morning while browsing the refrigerator, I saw a smattering of blueberries just begging to be used. So my trusty sidekick, my 10 year old son, decided we’d make something tasty. At first, we thought Blueberry muffins. But then I caught glimpse of the most beautiful lemons hiding behind cups of Oikos yogurt. Without even saying a word we both looked at each other, Lemon bars!!! So then we thought, why not mix the two, and put crumb on top. Uhhhhhh decisions! We finally asked the love of my life, Mr. Robinson aka daddy what he’d like better. Of course he had to dance around the house just knowing that any dessert was in lieu, hahaha! “Blueberry Lemon bars” he said with zero hesitation. And with that, we were off.
It felt like second nature, grabbing all of the ingredients to make Lemon bars. The only real decision here would be when to add the blueberries. I’d seen so many people make this dessert, and it totally turned purple. I definitely didn’t want that. So after whipping up, docking, and baking my crust I made the choice to add the blueberries after about 15 minutes of cook time.
The verdict was a total success. Just look at these, yum. I thought I loved lemon bars before, but these…these are hands down my favorite. The bluberries are cooked perfectly, and they burst in your mouth with that sweet blueberry goodness. Then the Crumble. Guys the crrrruuummmbbbllleeee is just decadent on these lemon bars. I added the blueberries, and the crumble at the same time. Uh sheer perfection! What a delicious treat, AND as always they are sugar free and low fat. Enjoy!
